Step 1
Prepare the dough: mix flour and salt in a large bowl and add the butter. Knead with your fingertips until the mixture is crumbly.
Add cold water one tablespoon at a time. Form a flat disc, wrap it in cling film and place it in the fridge for 20-30 minutes.
In the meantime,place the peppers and courgettes on the microwave crispy plate and season with oil, thyme, salt and pepper.

Step 2
Whisk together the eggs, egg yolks, cream and a pinch of salt and pepper in a large bowl.
Roll out the dough on a well-floured surface until you obtain a disc large enough to line the crisp plate.
Cover the mold, lightly greased with oil, with the disc of dough, making it adhere well to the edges.
30 minutes for the dough to rest.
Step 3
Fill the pastry with the vegetables, crumble the feta on top, then pour the egg mixture over the top.
Insert the crisp plate into the microwave by selecting the appropriate program
Let the quiche rest for at least 10 minutes before slicing.
Slice and plate.
