  • 250 ml Water
  • 1 Tablespoon Kosher salt
  • 2 Salmon fillets
  • For the glaze
  • 1 tablespoon Soy sauce
  • 1 tablespoon Orange juice
  • 1 tablespoon Lime juice
  • 1 tablespoon Honey
  • 1 teaspoon Oil
  • 1 teaspoon Rice vinegar
  • Chilli flakes to taste
  • Black pepper to taste
  • Coriander to taste
  • 1 Spring onion
  • White sesame to taste
  • Lime (wedges) to taste
  • For the side dish:
  • 300 g New potatoes (already cooked)
  • Fresh mixed aromatic herbs (rosemary, thyme, sage, marjoram..) to taste
  • Oil to taste
  • Salt to taste
  • Pepper As needed

Step 1
In a high-sided baking dish, combine water and kosher salt. Immerse the salmon flesh side down and let it rest for 10 minutes. Meanwhile, in a saucepan, combine soy sauce, orange juice, lime juice, honey, olive oil, rice vinegar, chili flakes, and black pepper. Bring to a boil over medium heat and cook until thickened.

Step 2
Remove the salmon from the marinade, rinse well to remove salt residue, and pat dry with absorbent paper. Arrange the salmon fillets on a baking tray lined with baking paper, brush with the glaze, and cook in the oven for 15-20 minutes using steam mode. (Discover more about our ovens).

Step 3
Slice new potatoes in half lengthwise and coat them in a bowl with chopped herbs, oil, salt, and pepper. Pan-fry the potatoes cut-side down for 4-5 minutes until golden, then turn and cook for an additional 4-5 minutes. Serve alongside the salmon with the leftover warm glaze, garnished with chopped coriander, sesame seeds, and green onion. Advice: You can use raw new potatoes, just cook them in boiling water for about 10-15 minutes until they are soft without falling apart.
