  • 30 grams Butter
  • 2 tsp Chocolate Chips
  • Vanilla Extract to taste
  • Salt to taste
  • 1 Egg yolk
  • 25 grams Plain flour
  • Butter shortbread biscuits (or bourbon biscuits) to taste
  • Dark chocolate to taste

Step 1
Place the butter and chocolate in a microwave-safe mug and microwave for 20 seconds, then stir the mixture.
Microwave for another 20 seconds, and stir again until the butter and chocolate are fully melted and smooth.
Stir in the sugar, vanilla extract, and salt until well combined.
Then add in the egg yolk and mix thoroughly until the batter is smooth and well-blended.

Step 2
Next, add the flour to the mug and stir until fully combined, making sure there are no lumps in the batter and wipe the edges of the mug with a clean spoon or cloth to remove any stray batter.
Cook the brownie in the microwave using the convection bake function (option 3) until done.
Once cooked, let the brownie cool in the mug for 5 minutes.

Step 3
While the brownie is cooling, melt the dark chocolate.
Use the melted chocolate to write "RIP" on the biscuits, letting them set for a few minutes before placing on top of the brownie.
Drizzle a few drops of the melted chocolate around the edges of the mug for extra decoration and enjoy.
Tips: You can dried fruit, like walnuts or hazelnuts, to the dough for an extra burst of flavour and texture.
