This tasty soup is ready in under 30 minutes and is gluten free. For ease all ingredients can be combined into a microwaveable container and cooked. An extra tip: Add some dried chilli flakes for an extra kick.
Step 1
Rinse the lentils, place them in a microwave-friendly bowl and add a little oil, vegetable stock, tomato puree and curry powder. Add salt and pepper and the coconut milk.

Select the Microwave function with 750W power level. Cooking time: 18 min.
